Inspector notes: PH food (pepperoni, spinach, tomato) was held at ~45.8 degrees F rather than 41 degrees F or below as required inside of the reach-in refrigerator in the rear storage area. Corrective action; PIC removed a container that was blocking the fan inside of the refrigerator to allow for proper circulation. PIC was able to derive proper cold-holding temperature of food items in the refrigeration unit during the inspection.
