Inspector notes: - The chlorine concentration in the sanitizing solution of the 3-bay ware washing sink was 0 ppm, rather than 50-100 ppm as required. Corrective action; Sanitarian advised PIC to use the 3-bay ware washing sink and service the ware washing machine during the inspection. - The quaternary ammonium concentration in the sanitizing solution of the 3-bay ware washing sink was 100 ppm, rather than 200-400 ppm as stated on the manufacturer's use directions. Corrective action; PIC added more sanitizer to the solution to derive the proper sanitizing solution concentration of 200ppm during the inspection.
