Inspector notes: -Slicer has an accumulation of dried food residue and debris on the inner food contact surfaces and is not being taken apart, washed, rinsed and sanitized at least every 4 hours. -Pink slime observed on inner surface of the ice chest in the bar area. The person in charge took apart the slicer and began to wash, rinse, and sanitize the blade guard and blade sharpener in the bar area 3 bay sink. The main part of the slicer must be cleaned in place using the same procedure.
