Inspector notes: Observed a deep, covered pot with lentil soup 71-94*F cooling at the time of the inspection in the walk-in cooler. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Per employee, TCS soup is cooled in large pot then transferred to individual portion sizes the next day. Per employee, TCS soup was made less than two hours prior to the time of inspection. All TCS foods being cooled in deep containers were transferred to shallow containers 4" or less to allow for rapid cooling
