Inspector notes: Observed chicken on the bone pieces in small sandwich prep cooler at 44*F and chicken wings in same refrigerator at 46*F. Cold hold of food is to be 41*F or lower. As per the owner, chicken was cooked around noon for an order and cooled back down. Cold hold of food to be 41*F or lower. Observed second container of prepped and cooled chicken at sandwich prep cooler at 47*F. As per the owner the chicken was prepared at 12: 30 pm cooled and diced before placing in sandwich prep cooler. Items were placed in walk in cooler to continue chilling to 41*F Advised staff to cool foods to 41*F prior to placing in sandwich prep coolers along the grill line
