Inspector notes: Observed discolored and heavily scored plastic cutting boards in use throughout the establishment. Per PIC, the cutting boards are replaced yearly. Advised PIC to replace as needed to maintain the surface smooth and easily cleanable without deep scoring. Discussed scoring may provide harborage conditions for bacterial growth. Advised PIC to regular warewashing should be sufficient to clean the surface. All food-contact surfaces must be smooth, non-absorbent, and easily cleanable. Repair, replace or resurface cutting surfaces prior to the next routine inspection

Inspector notes: Observed the 3 comp sink and soda machine drain lines stored below the flood rim of the floor sinks. Must repair all plumbing to a state of good repair prior to next routine inspection. Drain lines must be stored 1 inch above the flood rim of the floor sinks. Trim drain lines prior to the next routine inspection
