Per PIC some items were placed directly into the hot holding box from the fridge. PIC states others were recently cooked on grill and placed directly into hot box. Hot box had an ambient air temperature of 170'F. Per PIC, all items were placed into hot box within last 2 hours. All items were transferred to ovens to rapidly reheat to 165'F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above
