Time on stamp indicated 10:25am less than 1hour ago, temperature taken during inspection indicated 90*F. Discussed with Operator rapid cooling methods must include acceptable methods: rapid cooling equipment (Blaster), ice bath, adding ice as an ingredient or inside walk-in refrigeration unit as soon as temperature on fries is verified at 135*F. Discussed with operator to place fries in walk-in refrigeration unit at time of inspection
