Inspector notes: Observed pizza holding 110-116F under the warmer. Also observed rice holding 105F and grilled onions stored outside at 121F. PIC said the items were prepared 30 minutes prior and would be thrown out after 20 minutes. PIC said they are not using 4-hour time as a control and do not have a policy. TCS food items must be stored at 135F or greater when hot holding

Inspector notes: No sneeze guard present on warmer serving open food (pizza slices). Observed student grab pizza slice with bare hands and place it back on the warmer. Instructed nearby employee to discard pizza slice. Discussed importance of monitoring self service option. Food can be protected by packaging, sneeze guards, display case or other effective means

Inspector notes: Observed dried up onion residue on dicer, that was stored on the clean rack from previous day. Food-contact surfaces must be properly sanitized after washing and rinsing. All food-contact surfaces must be cleaned to sight and touch. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection

Inspector notes: Employee provided policy for time as a control, stating food is discarded at the end of lunch service. All TCS food on site had an internal temperature of 57-62*F at time of inspection, however, TCS food was not directly labeled with a discard time. All TCS foods being held under time as a control were properly time stamped at time of inspection. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control

Inspector notes: Observed two dim light bulbs in walk-in freezer. The light intensity shall be at least 108 lux (10 foot candles) at a distance of 75 cm (30 inches) above the floor, in walk-in refrigeration units and dry food storage areas and in other areas and rooms during periods of cleaning. Please replace light bulbs to increase light intensity in walk-in cooler prior to next routine inspection
