Inspector notes: Observed 2-door standing refrigerator operating at 52.7'F via min/max thermometer at time of inspection. All improperly cold-held TCS foods within the unit were willingly discarded at time of inspection. Discussed the importance of routine checks for all temperature controlled units on site with PIC. Establishment will discontinue use of 2-door standing refrigerator and utilize alternative refrigeration until repairs are made and unit is capable of maintaining all TCS foods at or below 41'F. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below

Inspector notes: Ambient temperature of cooler for raw burgers and other TCS food items found to be about 50*F. Food items were still cold holding and were moved to another cooler. Please continue to monitor and adjust the cooler to ensure it is able to maintain an ambient temperature of 41*F or below
