Inspector notes: Cut lettuce observed cooling (66*F internal temperature) in covered containers inside a reach-in cooler. Per PIC, the lettuce was recently prepped and was within the 4hr cooling parameter. PIC vented the containers and relocated them to the walk-in cooler to help facilitate rapid cooling. Discussed the importance of air circulation during the cooling process. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means.
