Discussed keeping containers loosely covered, or uncovered if protected from overhead contamination, during the cooling period to facilitate heat transfer from the surface of the food

Inspector notes: Observed the sausage gravy being hot held with an internal temperature of 85F, probe thermometer, verified by PIC. The hot well was not turned on at time of inspection and the gravy is held for 6 hours, according to PIC and the label. PIC discarded the gravy, see embargo form. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above

The equipment is used to store TCS foods and was stored as clean on the clean rack in the ware wash room. PIC placed the soiled equipment in the area to be rewashed. Equipment food contact surfaces and utensils shall be clean to sight and touch. TCS food debris remaining on clean equipment is a potential source of contamination for foods that come into contact with the equipment
