Inspector notes: At 3-compartment sink, chemical dispenser not working. Contact chemical company to repair dispenser. Quat sanitizer will be manually dispensed when warewashing. Maintain all equipment in proper working order at all times

Inspector notes: In hot holding unit, mozzarella sticks and cooked chicken with internal temperatures of 100*F-120*F. Per manager, TCS foods were cooked within normal time parameters. Employee moved mozzarella sticks and cooked chicken to cook top to reheat back up to 165*F. Maintain TCS (time/ temperature control for food safety) foods at a hot holding temperature of 135*F or higher at all times

Inspector notes: In walk in cooler, cooked pulled pork with a date mark of 9/4. Pulled pork was discarded. See embargo form. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1)
