Inspector notes: Observed full tray of hot holding spicy chicken nuggets in temperature danger zone (41*F-135*F). Internal temperature of the spicy nuggets was 109*F-127*F with inspector and establishment thermometers. Notified Person In Charge (PIC). PIC voluntarily discarded improperly hot holding chicken nuggets. Upon review of area it was observed two hot bulbs above spicy chicken nuggets were burnt out. ==== Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 135°F or higher
