Inspector notes: -- On prep line, observed container of sliced American cheese sitting on top of foil liner. The container had an old time in lieu of temperature (TILT) labeling as well as remnants of tomato and lettuce food debris inside. Per the person in charge (PIC), the container was carried over from the previous night. Reviewed cleaning frequency requirements with the PIC: All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. The PIC had an employee place cheese in a cleaned and sanitized container at the time of inspection

Inspector notes: -- On prep line, observed multiple containers of shredded cheddar cheese and sliced asiago cheese without TILT labeling on container. Per PIC, the items were removed from cold holding and placed on prep line around 7:00 AM. Reviewed MCESD requirements with the PIC: If utilizing 4 hours time as a public control, and not temperature control: - The food has to be marked or otherwise identified to indicate the time that is 4 hours past the point the TCS food was removed from temperature control. All TCS foods being held under time as a control were properly time stamped at time of inspection
