Discussed the establishment's policy for glove usage when handling exposed food. PIC will retrain employees in order to prevent food contamination

Inspector notes: Observed house-made chili reheating in the steamer in the back of the kitchen, with an internal temperature of 148-155F, probe thermometer, verified by PIC. According to PIC, the chili started reheating more than 2-3 hours prior to inspection. PIC voluntarily discarded the chili, see embargo form. Discussed the establishment's reheating policy and Food Code requirements. PIC will retrain employees to use an adequate amount of hot water in the steamer, set at the highest setting, and stir the chili often in order to reheat to 165F within 2 hours. TCS food items prepared onsite and reheated for hot holding must be rapidly reheated to 165°F within 2 hours prior to hot holding
