Inspector notes: -- On prep line, observed American cheese with time as a public health control/TILT time starting at 6:30 AM with a discard time of 10:30 AM. An internal temperature of American cheese measured at 52°F using probing thermometer around 11:25 AM. Reviewed MCESD requirements with the PIC: If utilizing 4 hours time as a public control, and not temperature control: - The food has to be marked or otherwise identified to indicate the time that is 4 hours past the point the TCS food was removed from temperature control. - Food that is unmarked or marked to exceed 4 hours must be discarded. The American cheese was discarded at the time of inspection

Inspector notes: -- Employee observed preparing food orders with loose/hanging jewelry on wrists. Reviewed jewelry restrictions with the PIC: Except for a plain ring such as a wedding band, while preparing food, food employees may not wear jewelry including medical information jewelry on their arms and hands. Requested jewelry be removed or restrained by glove (if wearing for religious purposes) at the time of inspection

Inspector notes: RPZ valve behind soda boxes is dripping continuously and also sprayed with enough force to spray water outside of the drain hub and wet the boxes and surrounding area. Please repair
