Inspector notes: Observed 6 containers of waffle batter (48'-51'F) containing raw eggs and dairy, being stored in the walk-in cooler at time of inspection. Waffle batter was being stored in deep plastic tubs, more than 4 inches in depth, while lidded. Discussed the importance of maintaining all TCS items unlidded during the cooling process. Per PIC, the waffle batter was prepared from cold ingredients the day prior to inspection. TCS foods prepared from cold or ambient room temperature ingredients must be cooled from 70°F to 41°F within 4 hours. All TCS foods improperly cooled were discarded by PIC at time of inspection
