Inspector notes: Observed raw chicken stored on top of RO packaged raw steaks. Informed PIC that the steaks need to be stored above the raw chicken, according to cooking temperature. PIC properly stored the raw animal proteins at time of inspection. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. Inspector notes: Observed the hose bib vacuum breaker calcified and leaking at the outside mop sink. Informed PIC that the hose bib vacuum breaker needs to be brought into good repair. Observed a hose with a shut off valve connected to the mop sink. Informed PIC that a new hose needs to be acquired without a shut off valve. All plumbing must be maintained in good repair at all times. Must repair all plumbing to a state of good repair prior to next routine inspection. Shut-offs, including chemical dispensers and sprayer nozzles, are not approved for continuous installation downstream from vacuum breakers

Informed PIC that the drinks need to be covered, have a straw, and placed in an area that will not contaminate food. Drinks were moved to the designated employee item area. Informed PIC that the pipe needs to be moved so that it is draining fully into the drain. Observed the drainpipes under the ice bin fallen into the floor drain. Informed PIC that the drainpipes need to be lifted so that there is a one-inch airgap between the outlet of the pipe and the top of the drain. All plumbing must be maintained in good repair at all times. Must repair all plumbing to a state of good repair prior to next routine inspection
