Inspector notes: -- Observed chlorine concentration levels testing under the required specifications of 50ppm-100ppm in the main kitchen dishwasher. The person in charge replaced the empty sanitizer and detergent containers and primed the dishwasher at the time of inspection. After replacing the containers and priming the dishwasher, the sanitation levels tested within the 50ppm-100ppm range. Please ensure employees are checking for low detergent/sanitizer containers, and utilizing test strips to verify dishes are getting sanitized

Inspector notes: -- In the walk-in refrigerator, an approximately 7"-10" deep container of sausage gravy had internal temperatures ranging from 67°F-112°F. The person in charge (PIC) stated the items were removed from hot holding table and placed in walk-in to cool approximately 3 hours prior to the inspection (10:00 AM). Reviewed approved cooling methods with the PIC. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling
