Inspector notes: Observed two employees handle soiled dishes and equipment, in the dish room and immediately handle clean dishes from recently washed racks, without washing hands. PIC instructed employees to wash hands, have contaminated dishes rewashed, and will have one employee handle the soiled dishes and the other handle the clean. PIC will retrain employees on proper handwashing and when to wash. The hands are particularly important in transmitting foodborne pathogens.
