Inspector notes: Observed heavy organic debris build up on several produce items, such as green bell peppers, cucumbers, tomatoes, strawberries, cantaloupe, honeydew in walk-in cooler. In addition, a variety of cheddar cheese, gouda cheese, havarti were covered in organic debris. PIC was instructed to discard and set aside to be discarded at time of inspection. Gallons of milk in walk-in cooler were dated from May and July of 2024, an actively being used to make ranch according to PIC. Through observation, milk was sour and visibly spoiled. Inspector notes: Observed mechanical warewashing machine actively being used dispensing 0 PPM of chlorine sanitizer. PIC was instructed to use three compartment sink with 200 PPM of Quat sanitizer until repairs can be made to warewashing machine. PIC, made a service call at time of inspection. It was also determined that chlorine sanitizer container was very low. PIC stated shipment for sanitizer would arrive at 4 PM today 8/20. Please test sanitizer levels regularly to ensure proper sanitizer is being dispensed
