Inspector notes: Observed multiple food items in the walk-in fridge and other reach in coolers past the seven-day date mark. The food items to be disposed include whipped butter (7/16), hollandaise sauce (7/22), egg salad (7/23), tuna salad (7/23). Food items were embargoed, and PIC disposed of them. Discussed checking the fridges on a schedule to look for out of date items with PIC. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection

Explained to PIC that everyone working with food needs to have a Food Handlers Card and additionally, at least one person with a Food Protection Manager Certificate needs to be on the premises during all hours of operation. Inspector notes: Observed a build-up of dirt and debris on the kitchen vents and surrounding ceiling panels. Observed food and other debris underneath ware washing equipment and other cooking equipment. Informed PIC that these areas need to be cleaned and continue to be cleaned at the frequency which prevents the accumulation of dirt, organic matter, and food debris. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection
