The employee in the kitchen stated that the item was not heated and began cooling three and a half hours prior. The employee relocated the item to the reach in freezer to rapidly cool. *The PIC stated that the sauce would be discarded if it did not hit 41F within thirty minutes of the inspection time. PHF/TCS foods prepared from ingredients at ambient temperature shall be cooled within 4 hours to 41°F or less
