Inspector notes: Observed beef au just holding on the grill in a metal pan with an internal temperature measuring 125*F when measured with a probe thermometer. Per PIC, the beef au jus was prepared yesterday, cooled, and reheated this morning. Observed the pan stored on the grill adjacent to the flame. No temperatures had been recorded since reheated. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were discarded by PIC at time of inspection. Reviewed reheating procedures for au jus with PIC. Ensure food prepared onsite are reheated to 165*F for 15 seconds before hot holding at 135*F above
