Inspector notes: Observed a covered container of Pico that was made earlier in the day at 49 Deg. F. in the walk-in. The item was uncovered, had a chill stick added, and was placed in the walk-in freezer at the time of inspection. Observed cut lettuce at 49 - 52 Deg. F. in the top portion of the prep refrigerator. Per operator they were just cut and placed in the unit. Assure all food products are cooled to 41 Deg. F. or below prior to placing in a prep refrigerator and do not overfill the unit. The pan was placed in the walk-in at the time of inspection. Be sure to allow any Time Temperature Control for Safety Food (TCS) food items to cool from ambient temperature ingredients in 4 hours

Inspector notes: Observed a container of chili in the walk-in on a bottom shelf at 44 deg. F. Per the operator the chili was made less then 2 hours prior with refrigerated and room temperature ingredients. Spoke to the operator about pre-chilling all of the ingredients prior to assembling the food item and checking the temperature after assembly. Also, observed a container of lettuce in the bottom portion of the prep refrigerator at the line at 46 - 50 deg. Per operator this was recently placed in the unit. It was moved to the walk-in a the time of inspection. Spoke to the operator about not using any of the prep-line refrigerators for items that maybe in the cooling process
