Discussed with PIC that thawing required to be done under refrigeration that maintains the food temperature at 41F or less or completely submerged under running water. Inspector notes: Observed food prep of tomatoes being sliced on cutting board that was placed over the 3-compartment sink and next to it the wash well is filled with water, soap and dirty dishes. Discussed with PIC that all food prep required to use the designated prep-table and prep-sink. 3 compartment sink may only be used if no dirty dishes are in sink and sink is washed, rinsed and sanitized before use.
