Inspector notes: Observed ROP raw salmon 10/18/25 date mark in freezer, no filled out temperature or produce date logs onsite, ROP TCS butter with 2/4/26 date mark in reach in cooler, ROP TCS chorizo and prosciutto in walk-in cooler without date mark label at the time of inspection. If the REGULATORY AUTHORITY grants a VARIANCE as specified in §8-103.10, or a HACCP PLAN is otherwise required as specified under § 8-201.13, the PERMIT HOLDER shall: Comply with the HACCP PLANs and procedures that are submitted as specified under § 8-201.14 and APPROVED as abasis for the modification or waiver. Establishment has logs printed and was instructed to fill out logs going forward. Establishment is not approved for ROP seafood under variance and salmon was voluntarily discarded at the time of inspection. Prosciutto and chorizo was properly date marked at the time of inspection. TCS ROP butter was discarded at the time of inspection. All procedures in approved variance/HACCP plan must be conformed to at all times
