RTE food that was contacted by bare hands was discarded by PIC at time of inspection

Inspector notes: Observed poblano cream sauce in a hot holding unit at 98°F and beans at 110°F. PIC stated these items had been held in the unit since opening at 11am. Temperatures were taken at 2pm, three hours after being placed in unit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were discarded by PIC at time of inspection
