Inspector notes: Observed shelled eggs on the top shelf of the cold-holding unit. Containers of cut vegetables were stored directly below the eggs. Discussed the proper storing according to cook temperatures, and person in charge (PIC) moved the food so that the eggs were below the vegetables. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code

Inspector notes: Observed a used juice container that was filled with powder detergent. The bottle only had a juice label. Also observed a spray bottle of de-scaler cleaner that did not have a label. The person in charge (PIC) used a marker to write the name on the bottles at time of inspection. All cleaners and chemicals need a label to reduce risk of chemical contamination

Inspector notes: Observed Spam, and other employee food items mixed in with foods for customers. Also observed beet root powder and batteries on the shelf at the food prep table. Person in charge (PIC) stated these items were for employees. Discussed with PIC to move personal items to a designated area. PIC will make space in the cold-holding unit that is designated for employee consumables that is labeled for employees. PIC also moved the beet root powder and batteries to the office/storage area. To ensure food safety, prevent physical contamination and the transmission of disease; employee eating, drinking, beverage storage, and using tobacco must be done in an approved area. PIC moved employee consumables to the designated area and will retrain on proper eating, drinking, and tobacco use
