Inspector notes: Observed containers of feta cheese and pepperjack cheese with datemarking of 09/26 in prep cooler reach-in compartment. Observed pans of same items in tabletop compartment of same unit with datemarking of 10/20. PIC stated tabletop items were portioned from the same batches from 09/26. Reviewed proper datemarking requirements with PIC and informed PIC that items portioned at a later date will still retain the prep date of the original item. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Observed cooked shrimp, salad with sliced tomatoes, cold cut ham improperly datemarked for more than 7 days with prep date of 10/20 and discard date of 10/31. PIC corrected discard date to 10/26 at time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Provided datemarking guidance via email
