Inspector notes: Observed a chlorine dishwasher with 0ppm of chlorine concentration after final rinse. Chlorine test strips were available but at the another kitchen within the premise. Several attempts were made to prime the dishwasher and there was 0ppm of chlorine after final rinse each time. PIC stated that they will submit a work order for the machine. Advised PIC to use the 3 compartment sink for sanitizing until dishwasher is fixed. The quat solution at the 3 compartment sink measured at proper level (150-400ppm) and establishment had test strips available

Inspector notes: Cooked pasta in closed zip lock bags observed with internal temperature range of 51-56*F inside the reach-in cooler across from the cook top. PIC stated that the pasta was prepared roughly 2 hrs. prior to inspection time. Also observed a tightly covered container of cooked shrimp with internal temperature of 45*F inside a reach-in cooler across from oven. PIC stated that the shrimp was recently transferred from the main kitchen to the bistro less than 30minutes prior to inspection time. The Ziplock bags containing pasta were opened and relocated to a larger fridge in back of the kitchen. The container of shrimp was left ajar to help facilitate rapid cooling

Inspector notes: The ambient temperature of the refrigerated trailer outside the bistro was observed at 50*F at time of inspection. All TCS foods were either discarded (cooked pork) or relocated to other functioning units. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. PIC submitted a work order and the repair company was able to show-up before end of inspection. The refrigerated trailer was later observed at 44*F and dropping. Advised PIC not to use it until it can maintain 41*F or below. Corrected at time of inspection
