Inspector notes: SECOND CONSECUTIVE. Observed bar dishwasher with 0 PPM of chlorine after 2 wash cycles. Staff mentioned both dishwashers and the auto sanitizer dispenser were serviced yesterday. Stating most of the internal machinery was replaced on the bar dishwasher. Staff to use the main dishwasher to sanitize dishes until the bar-side dishwasher can sanitize effectively. Staff reached out to their third-party servicer at time of inspection and they are projected to arrive today to finish working on the bar-dishwasher. Chemical dishwashers are to dispense 50-100 PPM of Chlorine tested off of the dishes being sanitized. Discussed best practices around testing and provided guidance

Inspector notes: Observed two wiping buckets in the back kitchen with 0 PPM of quat. Staff stated the wiping buckets had not been dumped out the night prior. All wiping buckets are to be changed every 4 hours or before if the quat sanitizer concentration drops below 150 PPM. Staff added this task to closing shift responsibilities. Retrained staff on sanitizer concentrations and wiping bucket procedures

Inspector notes: Observed buckets of portioned raw chicken wings and a baking sheet of raw hamburger patties on a shelf above syrups, lemon juice, packaged hot dogs, and packaged corned beef. No direct contamination was observed. Alerted staff who moved all raw animal proteins below RTE foods and organized raw animal proteins by cooking temperature at the time of the inspection.
