Inspector notes: Observed the handwashing sink to be blocked by bags of bagels and bananas. The bagels and bananas were placed onto a nearby cart in order to gain access to the sink. Discussed the importance of maintaining access to the sink in order to wash hands. Facilities must be maintained in a condition that promotes handwashing. Handwashing sinks must be maintained so accessible at all times, not used for other purposes than hand washing, and supplied with warm water, soap and paper towels

PIC marked each of the foods with the date of prep/opening. Inspector notes: Observed several wet wiping clothes on the counter, under clean drying dishes. According to PIC, the clothes are being used to absorb water from the drying dishes and are laundered weekly. Discussed using a non-absorbent mat. Wiping cloths, especially when moist, can become breeding grounds for pathogens that could be transferred to food. Any cloths that are not dry must be stored in a sanitizer solution of adequate concentration between uses. Moist cloths used for food contact surfaces shall be kept in an approved sanitizing solution
