Inspector notes: Observed containers of cut tomatoes, shredded cheese, and cooked sausage with internal temperature range of 46-55*F while cooling in the walk-in cooler. Lids were tightly shut for all 3 containers. All items were within proper cooling parameters, per PIC. The ambient temperature of the walk-in cooler was 36*F at time of inspection. PIC left container lids slightly ajar and internal temperatures were later observed at 44-46*F and dropping. Discussed importance of air circulation during the cooling process
