According to PIC, standard kitchen procedure was to keep RTE/TCS foods in the prep tables without disposing or moving them to a walk-in overnight , thus the RTE/TCS food in the prep tables are required to be date marked. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Spoke to PIC about proper date marking and created a plan to facilitate date marking of all food in prep tables. PIC agreed to date mark al food in prep tables and have date marking plan in effect at time of re-inspection
