Person in charge said they had been cooling on counter for nearly 2 hours before being bagged and put in cooler. Items were moved to open shallow containers and returned to cooler at time. Please ensure all time/temperature controlled for safety food items are cooled in shallow, uncovered containers (and moved to enclosed cooling equipment once steam has stopped) to allow for most efficient heat transfer
