Inspector notes: Observed bagged nacho cheese (69'F) being warmed inside of commercial dispenser unit. Per employee, bags were placed in the walk-in over-night and placed inside warmers to be reheated. Nacho cheese bag was placed in warmer about 1 hour prior to inspection. Also observed cooked hot dogs(111'F) and cooked shredded chicken (116'F) placed in a chafer in the food assembly area. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection
