Establishment had their protocol in place prior to the inspection preventing the sale of all TCS foods in this unit. Technician was able to fix the unit by the end of the inspection and had the unit being able to provide an ambient temperature of 41*F. Reviewed how cold holding equipment must have the capacity to maintain TCS foods at 41°F or below
