Person in charge (PIC) was unsure if date marks were correct, as they have hired new staff and are still training. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Discussed training all kitchen staff on proper date marking and checking date marks daily to ensure no RTE/TCS are held past 7 days
