Inspector notes: Ambient temperature within walk in refrigeration unit towards the front of the kitchen was measuring between 48-52F. All food in walk in was within cooling time frame and cold holding time frame and was moved to the walk in refrigeration in back of establishment. Establishment shall not use equipment in bad repair to store TCS foods. With current refrigeration capacity establishment is only able to cold hold food on premises and does not have space to adequately cool foods or receive any additional food. Reviewed with person in charge stopping any advanced food preparations or receiving of food until adequate refrigeration is restored. Ensure all cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Correct prior to re-inspection
