Inspector notes: Observed two deep metal cambros of cooked carne asada (65-71'F) being stored in a white standing refrigerator in the front service area. Per PIC, the carne asada was cooked and placed in the refrigerator to cool about 10 hours prior to inspection. Discussed proper cooling techniques with PIC. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. All TCS foods improperly cooled were discarded by PIC at time of inspection
