Inspector notes: Observed cooked black beans and an open bag of cheese sauce hot holding in the steam table make-line with internal temperatures of 93-110F, probe thermometer, verified by PIC. The cheese sauce and black beans are hot held for 8 hours and not under time as a control. The steam table was off or malfunctioning at time of inspection. PIC voluntarily discarded the cheese sauce and black beans due to being in the danger zone (41-135F) for around 3 hours. Maintaining cooked TCS foods at 135F or more during hot holding prevents significant regrowth of heat-injured microorganisms and prevents recontamination with bacteria that are newly introduced
