Inspector notes: Observed multiple bags of cooked and diced carne asada in the walk-in with no date mark indicating when items were cooked. Observed portioned bags of cooked noodles in back reach in cooler with no date mark. Person in charge (PIC) states items were cooked on Monday, 3 days before inspection. Explained to PIC that RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods were properly date marked at the time of inspection

Inspector notes: Observed fried yellow peppers (chiles gueros) in a container on top of front reach in with internal temperature of 67*F at time of inspection. PIC states the chiles are used in less than 4 hours and were fried and placed in the container 2 hours before inspection. PIC had a time stamp written on a paper to log when they were fried, but had no written policy indicating their procedure in the establishment. Explained to PIC that time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. Provided a physical copy of time as a control for establishment at time of inspection
