Inspector notes: Observed some dishes that were stored as clean at the clean dishes rack that upon separating, were observed to still have some food residues stuck to the inside of the pans. The dishes in question were returned to the 3-compartment sink to be washed, rinsed and sanitized at time of inspection. Discussed with person in charge to soak heavily soiled dishes in hot soapy water for an extended period of time to help loosen stuck on food if necessary.
