Inspector notes: Observed the main dishwasher measuring 0 PPM of chlorine. Staff confirmed dishes had been washed today. Staff to test the sanitizer strength on the first cycle of dishes. Management was alerted and plans to use the 3- compartment sink to sanitize dishes until the unit can be serviced. Management called their third party servicer at time of inspection. Inspector notes: Observed a rice scoop sitting in 70°F water. The employee stated it was stored in ice water for around an hour before temperature measurement. The rice scoop was washed and stored as dry at time of inspection. Proper storage of in-use utensils (used to serve Time Temperature Control foods) is to store utensils in either 41°F or below water, 135°F or hotter water, in dipper wells with running water, or stored dry/at room temp and changed every 4-hours.
