Inspector notes: Observed standing water in the lower inch of the floor sink across from the 3 comp sink and under the display coolers. Observed the drain slowly working but maintaining 1 inch of gray water at the bottom of the floor sink. PIC had an employee service the drain at the time of inspection but was unable to permanently clear the drain. No backflow of the drain observed. All plumbing must be maintained in good repair at all times. PIC contacted a plumber at the time of inspection who was able to fix the drain

Inspector notes: Observed cooling rolled pork skin and carnitas in a deep plastic container covered with plastic wrap with internal temperatures ranging from 86-120*F. Per PIC, the food had been removed from the kettle at 9am, air cooled for 30 minutes and placed in the cooler for the last 1.5 hours. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. PIC had the foods reheated to 165*F for 15 seconds to restart the cooling process. Advised PIC to cool on shallow metal pans in single layers to effectively cool below 70*F in the first two hours
