Inspector notes: Tuna, mayo, steak, chicken, roast beef, lettuce, cheese, yogurt, ham, pepperoni, salami, turkey, and meatballs with internal temperatures between 52 degrees F and 56 degrees F were cold holding in the walk-in cooler. Ambient temperature of the walk-in cooler was found to be 57.2 degrees F using a min/max thermometer. Spoke with PIC and a technician was called to repair the walk-in cooler. Establishment has sufficient cooler capacities to operate safely until cooler is repaired. A 24-hour reinspection will occur to verify that the walk-in cooler was repaired and is holding temperature below 41 degrees F. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below
