Inspector notes: Observed some dishes at the clean dishes rack that were stored as clean according to the person in charge. Upon separating some of the dishes, one was observed to have greasy smears/residue on the inside while another was observed to still have some spots of tomato sauce on the inside of the nested pans. The dirty dishes in question were taken to the 3-compartment sink to be washed, rinsed and sanitized at time of inspection. Discussed with person in charge that all food-contact surfaces must be cleaned to sight and touch
