Inspector notes: Observed meatballs in tomato sauce(128-131'F) being stored in a steam table on the assembly line. Steam table had not been filled with water, therefore unable to regulate temperature accordingly. PIC was unsure how long the steam table was lacking water. Discussed proper hot-holding parameters with PIC. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection

Inspector notes: Observed tomato slicer stored as clean on a drying rack across from the 3-comp sink with visible food debris and white residue on the food-contact surfaces at time of inspection. Discussed cleaning frequency with PIC. All food-contact surfaces must be cleaned to sight and touch. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection
